Soup season is here!

It is officially soup season, and Yes you can enjoy soups all year long, but now is when many of the heartier vegetables are in season, Also, you don’t have to go to Boston for New England clam chowder, Maine for Lobster bisque or even going to France for French onion soup, which BTW actually can be traced back to Roman times. Go figure! Today I’m gonna feature these healthy, three soups from the HRG Media group “Meals on a Budget series“.

There is something about potato leek soup that makes it healthy, possibly the chicken stock if you use it, but you can also use vegetable stock as well. First of all; Thank you Center for food action for the leeks…. simple: chicken or vegetable stock, russet potatoes cubed (or Idaho) leeks (whites only), thoroughly washed, Salt and white pepper (you can use freshly ground pepper if you want) 1 cup heavy cream. after prepping you sweat out leeks in butter and EVOO then add potato cubes then stock. Let simmer for about 30 minutes, blend add in pepper and pinch of salt. blend in food processor. MAKE SURE IT IS COOL BEFORE BLENDING in food processor. WATCH THE VIDEO CLICK HERE!

simply, sauté 2-3 cups onions and evoo. add Tbs. salt, pinch of pepper, then 4 cups beef broth, tbs. thyme. Add 1/3 cup sherry or sherry vinegar (alcohol does burn off& you can skip this ingredient if you wish). Boil for 30 minutes. Pour in oven safe bowl. put 2 thick slices of Italian bread on top (or stale bread) cover with 2-3 slices of your favorite cheese(I prefer, gruyere or mozzarella). Put under salamander (broiler) just until cheese starts to bubble and brown. (usually less than 45 seconds depending) CLICK HERE FOR THE VID.!

simple, but takes some time, definitely well worth it.. roast cut butternut squash at 400 degrees on a bed of carrots and onions for about one hour. then while roasting, make home made croutons and then infuse rosemary or sage in butter. When squash is roasted, add all the ingredients to a stock post and boil, adding salt pepper, infused butter. Add the secret ingredient which is about 2 table spoons of maple syrupy and a pinch of cayenne pepper! after swash is broken down you can strain or puree the mix. When done with that you must put the mix threw the strainer to get any fiber out that may not have blended. then add croutons! Simple, hearty!
